Which OS to choose from ?

Don't know what to pick as i've only used windows before
but i have my old laptop here to get messing about with new os's

will be on a dedi host in the end once im familiar and happy with an os
with 2 or 3 servers and 1 bungeecord.
specs: this cpu should be fine right ? a small community will house it.
Intel Xeon E3 1225v2 3.2 GHz with 32 GB

would you recommend windows/linux/Debian/Ubuntu/CentOS e.t.c ?
